Linda's Famous Whoopie Pies

Ingredients
- 1 ea cake mix; chocolate and red velvet are best
- 3 ea eggs
- 1/2 C water
- 1/2 C vegetable oil
- 1/2 C cream cheese, softened
- 1 C powdered sugar, sifted
- 1 C marshmallow cream
- 1/2 t vanilla extract
Instructions
- Beat the cake mix, eggs and water until well combined.
- Place 2-tablespoon sized dollops 2 inches apart on parchment paper lined baking sheet.
- Bake at 400, 8-10 minutes, until puffed and passes clean toothpick test. Cool to room temperature.
- Beat the butter, fluff, sugar, cheese, vanilla and salt until smooth.
- Place 1 1/2 T dollops on flat side of half of the pies. Top with remaining pies and press gently to spread filling.
- Refrigerate and serve chilled.
- Plate and serve.
